I am here to say that I used to hate leftovers. Seriously. We would make too much of a meal and then choose to just throw it away, as both Jason and I claimed that we wouldn't eat it. Thankfully, those days are long gone. They went the way of the days when we paid more for our grocery bill than we did for rent. Did I mention how glad I am those days are over?
We now love leftovers and maximize them every chance we get. We no longer eat frozen meals for lunch; we eat leftovers. Each recipe that I make is enough for four servings. For dinner Jason usually eats a serving and a half, I eat one serving, and leaves one and a half servings for lunch the next day, which we split. Since it's lunch, it's plenty.
I used to think that leftovers were so dull; who wants to eat the same meal twice? Uh...me. But, the good news is that we don't always eat the exact same thing. Lunch is a great time to add in a few other ingredients that you have on hand to change a meal up a bit.
For example, last night we ate Cheesy Meatloaf Minis. They were fabulous. I'm not even a meatloaf fan and I loved them! But, as much as I loved the meal, the thought of straight-up meatloaf for lunch was so not appealing to me. So for lunch today I just sliced a bit of mozzarella and threw it in the meatloaf tupperware and then I wrapped up a tortilla to go. I'll wrap it all up and melt the cheese for a little meatloaf on-the-go. Jason, on the other hand, will be putting his leftover meatloaf and mozzarella between two slices of bread for a great sandwich.
Or slice up this chicken and lay over salad for a healthy leftover lunch. This salad is fabulous leftover. Just package your potatoes separately so you can heat them up before adding to the salad. Any leftovers from this meal can just be tossed together to make one big salad for your next day lunch. You could make tasty sandwiches out of the leftover steak and tomatoes from this meal. Or turn these sandwiches into a healthy salad!
There are so many options when it comes to leftovers. Just make sure you're not tossing them like back-in-the-day Jason and Kellie used to do. Or, if you don't want them, bring 'em on over to my house. We'll take care of them for you. 😉
