Snack #1: Homemade Peanut Butter with Sliced Apples
Yields 1.5 - 2 cups
Ingredients:
- 3 cups organic unsalted, dry roasted peanuts
- ¼-1/2t salt
- Apples, sliced
Directions:
- Add peanuts to bowl of a food processor.
- Turn on and scrape bowl as necessary to break up the large peanut butter ball until the mixture becomes smooth and creamy, 10-15 minutes.
- Add salt slowly, process, then taste test. Repeat until desired saltiness is reached. Use a rubber spatula to scrape out and store in an airtight container.
- Serve with apples.
Compare this snack, with minimal sodium, no added sugar, and no artificial ingredients to a store-bought snack like Keebler peanut butter crackers, which has high sodium, high sugar, high levels of fat and calories, and is filled with artificial ingredients.
