So, it turns out I have a thing for bundles.
I like crispy bundles.
I like sugary bundles.
And now I like pillowy bundles.
Or maybe I just have a thing for the word bundle. You know how I feel about them words.
The word "bundle" does sound like what it is: it sounds all gathered up and tucked in, exactly what these little pizza bundles are.
They're warm tomato sauce, with a hint of garlic and onion, smothered over bites of pepperoni and gooey mozzarella cheese, all tucked up into a chewy, soft, garlicky, buttery dough.
Roll the dough out thinly, then use a knife to cut into small square-ish pieces, then layer on all the pizza roll ingredients: sauce, then cheese, then mozzarella and any other toppings you'd like. I made a variety of pizza rolls: I did some that were only cheese and some with pepperoni, grated onion, and slivered red pepper.
Once all the toppings are piled up, tuck all the ends in and wrap them tightly.
You'll have a little bundle, just like this.
Aren't they cute?
Lay out the pizza rolls on a floured baking sheet with a baking mat or wax paper.
Bake at 425 degrees, for 10-15 minutes, until rolls are golden brown.
When they come out of the oven, brush them with melted butter mixed with parmesan cheese.
It's like coming home from elementary school and fixing yourself a plate of Totino's pizza rolls all over again.
All you'll need is an episode of Rainbow Brite or Punky Brewster to go with them.
You could also serve with a side salad and some extra sauce for dipping, if you're so inclined.
