This really isn't a recipe.
I feel the need to warn you about that before you read the rest of this.
It's just tossing a bunch of stuff together in a bowl.
All that stuff tastes pretty good together.
But really, I just wanted an excuse to make these again.
This is just bacon.
It's lettuce, tomato, and red onion.
It's creamy blue cheese dressing and crispy croutons.
It's hardboiled eggs and roasted chickpeas.
Even though it's not really a recipe, it's a really nice end to a day. It makes you feel good about yourself. You're healthy. You get things done. You know how to make a mean salad.
Ingredients:
Salad:
1 head Romaine lettuce, washed and thinly sliced
2 tomatoes
¼ a red onion, thinly sliced
½ lb. bacon, cooked and crumbled
4 eggs, hardboiled, peeled, and chopped
½ baguette, made into croutons
2 cans chickpeas, made into roasted chickpeas
Dressing:
2 oz. blue cheese crumbles
1 tbs. mayo
⅛ tsp. freshly ground black pepper
⅛ tsp. kosher salt
⅓ cup buttermilk
Directions:
Assemble salad. Divide all salad ingredients between 4 large salad bowls. Place all dressing ingredients in a medium glass jar. Shake well to combine. Working with one salad at a time, pour the salad fixings into a large mixing bowl. Drizzle with about 2-3 tbs. dressing, then use tongs to toss salad. Place back in individual salad bowls, then continue with each salad.
