29.4: Mushroom Swiss Baguettes
1 loaf French bread
1 cup grated Swiss cheese
1 lb. sliced mushrooms
Fresh or dried thyme
1 tsp. kosher salt
1/8 tsp. black pepper
1 tbs. olive oil
2 cloves garlic, minced
Lettuce and tomatoes for salads
Heat oven to 400 degrees. Slice French bread in half and scoop out some of the soft bread from the middle.
Heat 1 tbs. olive oil in large skillet. Add mushrooms and saute, stirring often, about 1 minutes, then add minced garlic and thyme. Saute for another few minutes until garlic is soft and fragrant and most of the liquid from the mushrooms has reduced. Remove from heat.
Sprinkle bread with swiss cheese. Then top with mushroom mixture and spread evenly. Place on baking sheet lined with foil into the oven and bake until the edges of bread are browning up and cheese is melted and bubbly.
While bread is in the oven, prepare salads. With torn lettuce, sliced tomatoes, a drizzle of basalmic vinegar and olive oil, and a sprinkle of kosher salt and a grind of black pepper.
Remove bread pizzas from oven, slice, and enjoy while hot, alongside the pizza.
