Banana Bread Remix
I first posted this recipe about a year ago, but I wanted to give it a little more spotlight because it is so good and it is so easy. I find myself buying bananas and purposely allowing them to go bad just so I can make them into banana bread. This bread is seriously delicious. It is creamy and light and crisp on the top and all melt-in-your-mouthy. It is a quick bread, similar to Cinnamon Walnut Bread, which means it is scarily easy (I say it’s scary because I’m afraid that I’ll make it too often…).
3 ripe bananas, peeled
1/3 cup melted butter
1/2 cup sugar
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 egg, beaten
1/2 cup crushed walnuts (I used a mixture of pecans and hazelnuts, because that’s what I had on hand)
Heat oven to 350. Grease loaf pan, then set aside.
Mix together mashed bananas with melted butter.
Add sugar, beaten egg, and vanilla; mix to combine. Sprinkle baking soda and salt over the mixture and mix in. Add the flour, then mix.
Pour mixture into prepared loaf pan and sprinkle top of batter with crushed walnuts. Bake on middle rack, 50-60 minutes, or until a toothpick inserted into the loaf comes out clean. Remove from pan, cool, then slice and serve.
