Recipe 24.3: Italian Grilled Cheese Sandwiches

These sandwiches are a riff on the classic grilled cheese – like a grilled cheese sandwich and a cheese pizza got together and had a baby. A delicious little food baby in the form of these bad boys. With a side of salad and tomato sauce for dipping, these make a great lunch or dinner.


8 slices of bread

1/2 lb. sliced mozzarella cheese

1/2 cup unsalted butter

1/4 cup parmesan cheese

2 cloves garlic, minced

2 tbs. olive oil

15 oz. can tomato sauce

1/2 tbs. basil, oregano, parsley

1/4 tsp. crushed red pepper flakes

salt and pepper, to taste

Heat olive oil in a small saucepan over medium heat. Add garlic and cook 1-2 minutes, then add red pepper flakes and cook another minute. Add tomato sauce. Stir to combine, then stir in basil, oregano, parsley, and salt and pepper to taste. Reduce heat to low and allow to simmer.


While sauce simmers, melt butter, then add in the 2 remaining cloves garlic and the parmesan. Stir to combine. Use a pastry brush to brush onto one side of each slice of bread.

Heat a large skillet over medium-low heat. Lay 3 slices of bread, buttered side down, in the skillet, then top with 2 slices of mozzarella cheese. Top with another slice of bread, buttered side up. Cook until the bottom slice is toasted a light golden brown, 3-4 minutes, then flip and repeat with other side of sandwich. Repeat with all remaining sandwiches.

Prepare salads while sandwiches toast. Serve a sandwich on a plate with a small bowl of sauce and a bowl of salad. Dip sandwich into sauce to eat.
