Yes, you read that right. I did indeed craftily insert the word “yum” into the name of this post. So clever, I know.
This bread is seriously delicious. It is creamy and light and crisp on the top and all melt-in-your-mouthy. It is a quick bread, similair to Friday’s Cinnamon Walnut Bread, which means it is scarily easy (I say it’s scary because I’m afraid that I’ll make it too often…). I found a recipe on Simple Recipes, and then made a few adaptations to meet my liking.
3 ripe bananas, peeled
1/3 cup melted butter
1/2 cup sugar
1 tsp. vailla extract
1 1/2 cups all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 egg, beaten
1/2 cup crushed walnuts
Heat oven to 350. Grease loaf pan, then set aside.
Mix together mashed bananas with melted butter.
Add sugar, beaten egg, and vanilla; mix to combine. Sprinkle baking soda and salt over the mixture and mix in. Add the flour, then mix.
Pour mixture into prepared loaf pan and sprinkle top of batter with crushed walnuts. Bake on middle rack, 50-60 minutes, or until a toothpick inserted into the loaf comes out clean. Remove from pan, cool, then slice and serve.
