Week 5 Menu and Grocery List
This week was my first full week back to school, and it was a busy one! Meals this week needed to be fast and – in the case of two meals – they needed to be meals that my husband could prepare without me (and without a precise recipe). Needless to say, I survived the first full week of school and Mr. Blackboard Kitchen more than survived in the kitchen without me (maybe I should put him to work more often?!). In any case, I imagine that you are equally as busy this time of year, so I hope that these speedy meals give you a bit more time in the evening to relax (or plan lessons, or do laundry, or play with your kids…). I’m also going to begin rotating a meal from previous weeks into the menus; if you have any favorite meals that you would like to see again, please feel free to leave a comment and let me know!

- 1 red pepper
- 2 yellow onions
- green onions (I had green onions left over from Week 4, so did not purchase a new bunch)
- 1 zucchini
- 1 shallot (find these by the onions – they are small and brown/rosy in color)
- 1 head garlic
- bunch baby spinach
- 1 avocado
- 1 jalapeno
- 1 lb. boneless, skinless chicken breast
- 1 lb. ground beef or turkey (I use lean turkey)
- 1 package bacon
- 1/2 cup Parmesan cheese
- Brown rice
- Hoisin sauce (find on the aisle with Asian ingredients)
- Soy sauce
- Sesame oil
- 1 lb. whole wheat spaghetti
- 1 large can crushed tomatoes
- 1 package yeast (find in the baking aisle)
- 6 cups all-purpose flour
- Sea salt
- 4 whole wheat tortillas
- 1 can black beans
- 1 can pinto beans
- 4 whole wheat bagels
- mascarpone cheese (find it in the specialty cheese section)
- 1 cup part skim ricotta cheese
- 1 cup shredded cheddar cheese
- Eggs (you’ll need 4)
If you’ve never used hoisin before, it is an Asian condiment made of spices, chilis, and soybeans. We’ll use it in a stir-fry dish this week. The soy sauce and sesame oil are for the same dish. These are all great ingredients to keep in the pantry; I always make sure to have them on hand as their uses are versatile.
Mascarpone is an Italian cream cheese. We will add it to our tomato sauce. It is deliciously creamy!
We are going to make our own pizza dough this week; I put the pizza recipe as the last meal of the week so that you can make it on Friday or Saturday night (we made it on a Saturday), since it’ll take a little longer because the dough needs to rise for a couple of hours. If you know you won’t have the time this week then you can simply buy premade pizza dough (look for it on the refrigerated or frozen aisles) or use a mix (I like Jiffy pizza dough mix the best) or a pizza dough in a tube (such as Pillsbury).
As always, there are several ingredients that you will need this week that are not on the grocery list. Out of your pantry you will need: olive oil, dried basil, oregano, parsley, salt, pepper, crushed red pepper, adobe chili powder, cayenne pepper, cumin, and canola oil. Make sure you have all these items on hand!
