Menu Notes

Note that all meals feed four; for my husband and I, I make enough for four and then we always have lunch for the next day!  If you are cooking for one, you might want to cut the recipes in half.

You’ll notice there are a lot of potatoes on this week’s menu; this is because my local grocery had 10 lb. bags on sale for $2.  So, we’re having potatoes three times this week – a $2 bag of potatoes was too good for me to pass up!

I had several of the ingredients for these meals already on hand, which is why I decided to make them this week.  For instance, I had parmesan and chicken broth (1.1); pecans, hamburger buns and mayo (1.2); ground elk and chili seasoning (1.3); and ground turkey and adobo chili powder (1.4).  I added all of these items to the grocery list below and included them in the estimated cost.

Grocery List

Estimated Cost:  $70

  • 1 Jalapeno
  • 1 Peach
  • 10 lb. bag Potatoes
  • 1 head Lettuce (I used green leaf)
  • 1 bunch Parsley
  • 1 Garlic bulb
  • 2 yellow onions
  • 1 bunch green onions

  • 3 lbs. Ground turkey, elk, or beef (whatever you prefer or is cheapest)*
  • 1 package Chicken breasts (boneless and skinless)
  • 1 pkg. bacon

  • 1 cup Pecans
  • 1 cup Walnuts
  • 15 oz. can Chicken stock (reduced sodium)
  • Grated parmesan cheese
  • Chili seasoning packet
  • Adobo chili powder (or taco seasoning packet)
  • Mayonnaise (I prefer mayo made with canola oil)
  • 1 can (15 oz.) black beans
  • 1 can (15 oz.) pinto beans
  • 1 bag Whole wheat tortillas
  • 16 oz. Whole wheat fettuccine or linguine
  • 15 oz. can Tomato sauce*

  • Loaf wheat bread (you’ll only need 3 slices for a recipe – you can use the rest for sandwiches!)
  • 4 Sandwich rolls (the better the bread, the better the sandwich!)

  • Block cheddar cheese
  • Milk
  • Small sour cream
  • Eggs

Grocery List Notes

With the exception of the items I already had in my pantry, I purchased all items this week at my local farmer’s market grocery store (Sunflower Market).

You will need a few items not mentioned on this list, including salt, pepper, olive oil (extra virgin or regular), and spices:  cayenne pepper, garlic powder, and rosemary.  If you do not have any of the spices and do not wish to purchase them, you can easily substitute anything that you have on hand.

*Also, please note:  My chili mix called for 2 lbs of browned beef, as well as a can of tomato sauce.  Be sure to check your mix – it will tell you everything you need.
