Recipe 1.5:  Breakfast Burritos

Don’t be fooled by the “breakfast” title! This meal is a great way to end the week, as it uses up all the leftovers from Week 1. It’s hearty and super simple to throw together at the end of a long week.


4 wheat tortillas

6 slices bacon, cut into 1-inch pieces

3 eggs

1 ½ cups leftover homestyle potatoes, heated

1 cup shredded cheese

2 cups diced tomatoes


Preheat oven to 250 degrees. Wrap tortillas in foil and place on top rack in oven to warm.

Heat a medium fry pan over medium heat.  Once warm, add bacon.  Cook to desired crispness, stirring often, for 7-8 minutes.  Drain bacon on paper towels, pat to absorb excess grease.

While bacon cooks, crack eggs into bowl.  Add splash of milk, season with salt and pepper, whisk together to break yolks.  Heat a small fry pan over medium heat; spray with cooking spray.  Add egg mixture.  Scrape sides and bottom of pan often with a rubber spatula to scramble eggs.  Cook to desired consistency, 4-6 minutes.

Assemble burritos.  Layer tortillas with eggs, bacon, potatoes, cheese and tomatoes. Add any other leftovers from earlier in the week – spicy beans, shredded lettuce, sour cream, or green onions would be a delicious addition!
