Recipe 1.2: Tacos with Onions and Spicy Beans
A Mexican feast! Tacos are a fairly basic meal, but make it with these easy additions to add a new dimension and flavor to your taco night. I have never been a fan of refried beans out of the can – but I love restaurant refried beans. I came up with this recipe – it is much healthier than typical beans, but so tasty that you don’t miss the “real” thing! Smashing the beans gives great texture and adding the garlic and jalapeno add a spicy pop of flavor.
Ingredients:
Meat:
1 lb. ground meat (I use ground turkey)
Approx. ½ tsp. each adobe chili powder, garlic powder, cayenne pepper, cumin, salt, and pepper (or use 1 packet taco seasoning)
Beans:
4 tbs. olive oil
1 tbs. minced jalapeno (add more or less depending on how spicy you like it)
1 tbs. minced garlic (about 2 cloves)
1 can black beans
1 can pinto beans
Onions:
2 tbs. olive oil
1 large yellow onion, sliced
Salt
4 large wheat tortillas
Instructions:
Preheat oven to 350 degrees. Heat a skillet over medium heat. Brown ground meat in skillet. Just before fully browned, add seasonings, along with ¼ cup water.
While meat cooks, add 2 tbs. olive oil to another skillet, over medium to medium-high heat. Add onions and salt, to taste. Allow to carmelize, around 7-10 minutes.
Wrap tortillas in foil and put in oven. Let warm until the entire meal is prepared.
