Seriously.

I’m never much of one for Valentine’s Day. I might be guilty of telling Jason that hebetternotgetmeanythingorelse. Okay, I definitely tell him that. It’s just that I always feel like flowers on V-day don’t mean quite as much as flowers not on V-day.

On Valentine’s Day, flowers are a big no-no in this house, chocolates are scorned (scorned, but obviously gobbled up), and teddy bears are tossed to Ava. But, pizza? There is no scorn for pizza. Especially pizza that’s chock-full of fresh tomatoes, roasted garlic, and spicy sausage.

It’s the truth.

The secret to amaaaaazing pizza? Extra sauce. Uh-huh!

The secret to the most flavorful of all crusts? Minced garlic spread right over the top of it, then baked for a while so it gets nice and roasted. Oh yeah!

You should totally make this for your sweetie. They’ll swoon.

Ingredients:

(makes 2 pizzas)

2 balls of pizza dough, homemade or store bought

15 oz. can tomato sauce

1 lb. spicy Italian sausage

4 cloves garlic, minced

2 tbs. olive oil

1/2 tsp. each basil, garlic powder, and oregano

1/4 tsp. each salt, pepper, and red pepper flakes

1 1/2 cups shredded mozzarella cheese

4 tomatoes, sliced

Directions:

Heat oven to 450 degrees. Prepare pizza dough. If using a pizza stone, allow to heat in oven, then remove and lay pizza dough over the stone. If using a baking sheet, spray with non-stick cooking spray, then lightly dust with cornmeal. Spread pizza dough on sheet. Sprinkle minced garlic over the dough, then drizzle lightly with olive oil. Bake for 7 minutes to create a slightly springy crust, then remove from oven.

While dough bakes, brown sausage in a medium skillet over medium heat. Crumble with your wooden spoon as it cooks to create fine pieces of sausage. Allow to thoroughly cook, around 8 minutes, then drain on paper towels.

Prepare sauce while sausage cooks. Pour sauce into a small bowl. Add seasoning and stir to combine. Taste to check seasoning. Remember that this sauce will be spread out over the entire pizza, so seasoning may taste a little strong. Don’t worry: it will be great on the pizza! Spread sauce evenly over pizza. Sprinkle with cooked sausage, then with cheese. Layer with sliced tomatoes, then return to oven and bake 7-10 minutes, until cheese is melted and browned.

Remove from oven, slice, and serve immediately.
