The Perfect Summer Salad

Have you ever heard of the perfect summer outfit?

Or the perfect summer date?

The perfect bikini body?

Perhaps the perfect summer vacation?

This is like that.

Except it’s the perfect summer salad.

I’m not quite sure exactly how to stress how delicious this salad is.

Maybe I could tell you about the fresh strawberries.

Or about the crispy, toasted almonds and sesame seeds.

Or maybe I should just try to explain the subtle tang of the dressing.

Maybe I should just skip it all and get straight down to bizness.

My friend/cousin/adopted aunt Melanie made this and brought it over to my house a couple weeks ago. It was amazing. She found the recipe in Colorado  Classique. I’ve modified the recipe slightly below.

Here are the ingredients:

1/4 cup sugar or agave nectar
2 tbsp. apple cider vinegar
1 tsp.  poppy seeds
2 tbsp. minced red onion
1/4  tsp. sweet paprika
1/4 cup grapeseed oil
1 tsp. kosher salt
1 cup chopped almonds
1 tsp. sesame seeds
1 tbsp. butter
1 bunch spinach or mixed lettuces
1 pint fresh strawberries, sliced
Mix all dressing ingredients together, adding olive oil last.
Toast almonds and sesame seeds in butter.
Combine spinach or lettuce with the sliced strawberries, almonds, and sesame seeds in bowl.  Add dressing and toss.
Serve this salad at a barbecue.
Serve this salad at your mom’s birthday dinner.
Serve this salad alongside anything you like.
Or eat it alone.
It doesn’t really matter.
