26.1  Spring Salad with Chicken and Tart Green Apple

*All recipes feed four.

Grocery List

Estimated Cost:  $60

Produce

  • 1 lb. spring Romaine mix
  • 2 Granny Smith apples
  • 1 bunch parsley
  • 1 bunch broccoli
  • 1 head garlic
  • 1 large bunch green onions
  • 1 bunch cilantro
  • 1 bunch carrots

Meat

  • 4 pork chops
  • 1 lb. raw shrimp
  • 1 package bacon
  • 2 boneless, skinless chicken breasts
  • 3 chicken thighs

Pantry

  • 16 oz. angel hair
  • 1 jar apricot preserves
  • 3 slices whole-wheat bread
  • 4 whole-wheat tortillas
  • peanut butter
  • 1 cup polenta (corn grits) – get this in the bulk section!
  • 1/4 cup walnuts

Dairy

  • 2 oz. blue cheese
  • 3 oz. sharp cheddar
  • 2 tbs. unsalted butter

On-hand Items

As always, there are several items that you will need and are not on this week’s grocery list because you should have enough remaining from when they were on the grocery list in previous weeks.

Be sure you have the following on hand:

  • salt
  • pepper
  • olive oil
  • grapeseed oil
  • apple cider vinegar
  • reduced-sodium soy sauce
  • chili paste (sambal olek)
