Week 21 Menu

21.1  Chicken Caesar Wraps with fruit

21.2 Chicken with Mushroom Sauce, over Mashed Potatoes and Roasted Brussel Sprouts

21.3  Pizza with Jalapeno and Pineapple

21.4 Cheesy Meatloaf Minis with Salad

*All recipes feed four.

 

Grocery List

Estimated Cost:  $60

Produce

  • 1 yellow onion
  • 3 jalapenos
  • 1 head romaine lettuce
  • 2 lemons
  • 1 shallot
  • 1 bunch parsley
  • 1 pkg. sliced mushrooms
  • 1 head garlic
  • 4 cups mixed lettuce
  • 1 lb. brussels sprouts
  • 3 lbs. Yukon Gold potatoes
  • Fruit – your choice (will be a side dish for the wraps)

Meat

  • 1 ½  lbs. ground beef
  • 2 lbs. boneless, skinless chicken breasts

Pantry

  • 1 pkg. whole-wheat tortillas (go with fresh ones, if you can!)
  • small can tomato sauce
  • ½ cup ketchup
  • 1 tbsp. prepared horseradish sauce
  • 1 cup reduced-sodium chicken stock
  • 1 pizza crust (either ingredients for, or pre-made, such as Jiffy)
  • 2 anchovy filets
  • 1/2 cup canola mayo

Dairy

  • 1/3 pkg. reduced-fat cream cheese (I’m referring to the typical 8 oz. pkg.)
  • 3 oz. block white cheddar cheese
  • ½ c. grated parmesan cheese
  • 1 cup mozzarella cheese, grated
  • 1 stick butter
  • 1 egg
  • ½ c. heavy cream (do you have some leftover from last week?)

Bakery

  • 1 loaf fresh French bread

Alchohol

  • ½ cup white wine (if you prefer not to use wine, you could always use more chicken stock in its place)

On-hand Items

As always, there are several items that you will need and are not on this week’s grocery list because you should have enough remaining from when they were on the grocery list in previous weeks.

Be sure you have the following on hand:

  • salt
  • pepper
  • non-stick cooking spray
  • olive oil
  • canola oil
  • grapeseed oil
  • basalmic vinegar
  • dried basil, oregano, parsley, thyme
  • garlic powder
  • all-purpose seasoning, such as Emeril’s Essence, Lawry’s seasoned salt, etc.
  • 1 ½ tsp. all-purpose flour
  • crushed red pepper flakes
  • 1 tbs. Dijon mustard
