Week 20 Menu

20.1  Chili with Jalapeno Scones

20.2 Thai Chicken Pizza

20.3  Pasta with Spinach Pesto

20.4 Sour Cream Chicken with Roasted Brussel Sprouts

Grocery List

Produce

  • 2 yellow onions
  • 3 jalapenos
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 bunch scallions
  • 1 bunch cilantro
  • 1 lb. baby spinach
  • 1 head garlic
  • 1 sprig rosemary (you can sub dried rosemary!)
  • 1 lb. brussel sprouts
  • 2 lemons

Meat

  • 2 lbs. ground beef
  • 2 lbs. boneless, skinless chicken breast

Pantry

  • 1 pkg. chili seasoning
  • 15 oz. can tomato sauce
  • ¼ cup plum sauce (found on the Asian foods aisle)
  • ½ cup peanut butter
  • 3 tbs. reduced-sodium soy sauce
  • 1 tbs. sugar
  • 2 tbs. rice vinegar
  • ¼ cup dry roasted peanuts
  • ¼ cup walnuts
  • 1 lb. whole wheat pasta, such as penne or rotini
  • 1 cup reduced-sodium chicken stock
  • 2 pizza crusts (either ingredients for, or pre-made, such as Jiffy)
  • 1 package ritz crackers

Dairy

  • 1 medium-large container low-fat sour cream
  • ½ c. shredded cheddar cheese, optional
  • ½ c. shredded Monterey jack cheese
  • ½ c. grated parmesan cheese
  • 10 tbs. butter
  • ¼ lb. block pepper jack cheese
  • 2 eggs
  • ½ c. heavy cream

On-hand Items

As always, there are several items that you will need and are not on this week’s grocery list because you should have enough remaining from when they were on the grocery list in previous weeks.

Be sure you have the following on hand:

  • salt
  • pepper
  • olive oil
  • nutmeg
  • 2 cups + 1 tbs. all-purpose flour
  • 2 tbs. cornmeal
  • 1 tbs. baking powder
  • crushed red pepper flakes
