Recipe 15.1: Grilled Cheese Sandwiches with Apples and Salad with Bleu Cheese

I know, I know…you’ve had grilled cheese before! You don’t need me to tell you how I did it. Well…too bad. I’m tellin’ ya anyway! Sometimes nothing beats a delicious meal of warm, toasty bread filled with gooey cheese. Sometimes you have nothing else in your house with which to make dinner and so really it is a matter of necessity, not choice that leads you to create such a meal for dinner….
Ingredients:
1 loaf multi-grain bread
Cheese, your choice
2 tbs. butter
1 tbs. parmesan cheese
1/2 tsp. garlic powder
4 Gala apples
1 head lettuce, washed and cut
grapeseed oil and basalmic oil, for drizzling
salt and pepper, to taste
1/4 cup bleu cheese crumbs
Directions:
Heat a skillet over medium heat. Melt butter in small dish. Slice bread and cheese. Lay cheese on one slice of bread, then top with a second slice of bread. Add parmesan and garlic powder to butter and mix to combine. Spread butter mixture over top bread slice, either with a knife or a pastry brush. Lay buttered side down on skillet. Spread butter onto top bread slice. Allow bread to toast and cheese to melt, 3-4 minutes. Flip sandwich and toast other side, 2-3 minutes.
While bread toasts, slice apples and arrange on plate. Prepare side salad. Add sandwich to plate and cut in half.
