Recipe 13.3: Pizza with Sausage, Onions, and Sun-dried Tomatoes

We love homemade pizza and, although it takes a bit more time, I always think it is worth it to make homemade dough. It tastes better, cooks fabulously, and has much less sodium that anything I can buy. However, if you are short on time then store-bought dough can definitely be the way to go. The great thing about this pizza is that you can sub out ingredients and top it with whatever you like. It is so easy and absolutely delicious.
Ingredients:
1/2 lb. spicy Italian sausage
1 yellow onion, thinly sliced
4 cloves garlic, minced
4 large sun-dried tomatoes (packed in oil), drained and sliced
1 small can tomato sauce
1/2 tsp. each basil, garlic powder, red pepper flakes
1/4 tsp. each salt, pepper, and oregano
Pizza dough, homemade or store-bought
1/2 cup mozzarella cheese
Directions:
Heat oven to 350. Prepare pizza dough. Spray a baking sheet with non-stick cooking spray, then lightly dust with flour. Spread pizza dough on sheet. Bake for 5 minutes to create a slightly springy crust. Remove from oven.
Prepare sauce while sausage cooks. Pour 1/4 -1/2 cup of sauce into a small bowl. Add seasoning and stir to combine. Taste to check seasoning. Remember that this sauce will be spread out over the entire pizza, so seasoning may taste a little strong. Don’t worry: it will be great on the pizza!
