Recipe 10.1: Fresh Pasta with Creamy Tomato Sauce and Garlic Bread

Can you tell that I was craving carbs on the night that we made this? I was, and this absolutely hit the spot. If you have never had fresh pasta before, you will love it, guaranteed. The flavor and texture is much different than dried pasta and it is delicious. It is more expensive than dried, so if you’d like to save a bit more cash, you can sub dried fettuccine instead. It’ll still be great.

Ingredients:

1-2 package(s) fresh pasta (we did one package and had only 1 small tupperware of leftovers)

Sauce:

1 large can crushed tomatoes with no salt added

1 small container mascarpone cheese (optional)

4 cloves garlic, minced

3 tbs. olive oil

1/4 cup red wine (optional)

1/2 tbs. each dried basil, oregano, parsley, salt

1 tsp. red pepper flakes and pepper

Bread:

1 small loaf Italian or French bread

3 tbs. butter

1 tbs. parmesan

1 tsp. each basil, pepper, red pepper flakes, garlic powder

Directions:

Begin with sauce. Heat large pot over medium heat. Add oil. Once heated, add garlic and red pepper. Allow to soften, then add can crushed tomatoes. Stir in basil, parsley, oregano, salt, and pepper (to taste). Add wine, if using. Bring to a boil, then reduce heat to simmer and cover. Allow to simmer for at least 10 minutes. Leave covered and simmering until you are ready to serve. Add in the mascarpone cheese about 5 minutes before serving. Allow to melt and stir to incorporate.

Heat a pot of water over high heat. Preheat broiler on low. While sauce simmer, prep bread. Cut into thick slices. Melt butter, then add in spices and parmesan cheese. Mix to combine. Use a pastry brush to spread butter on bread slices. Put under broiler and allow to toast, 3-5 minutes. Watch bread carefully to ensure it does not burn.

Plan to drop the pasta in boiling water at the same time as when you put the bread in the oven. Fresh pasta cooks much more quickly than dried. Cook according to package directions. Drain pasta in colander, then add to pot of sauce. Toss to combine and serve in a large bowl. Serve alongside garlic bread.
