Menu Notes

This week features of few of the favorites from the Blackboard Kitchen casa. Every meal (except one) has a story that goes with it, so be sure to read the intro. to each recipe this week to find out more! (If you’re wondering why you only see four meals instead of five, click here for more info.) Note how a few similar ingredients are used throughout the week; this will help cut down on the grocery bill!

Grocery List

Estimated Cost:  $60

Produce

  • 7 cups field greens
  • 4 Roma tomatoes
  • 2-3 large zucchini
  • 1 head garlic
  • 1 red onion (I had red onion leftover from a week ago, so I used that)
  • 3-4 beets (figure 1 beet per person)
  • strawberries
  • 1 avocado
  • 1 lb. green beans

Meat

  • 2  lbs. boneless and skinless chicken breasts (I bought two huge chicken breasts and Jason cut them up when we got home – ½ of it was cut into strips for the sandwiches and the other ½ he cut into small chunks for the salad)
  • 4 pork chops

Pantry

  • Hot sauce (our favorite is Frank’s hot sauce)
  • 2-3 cups panko bread crumbs
  • Pork rub (we made our own, but you could buy it pre-made. Scroll to the end to see what ingredients went into our rub if you want to make it yourself.)
  • 1 large can crushed tomatoes
  • Canola mayonnaise

Bakery

  • 1 loaf ciabatta bread, or 4 individual ciabatta rolls

Dairy

  • 1 cup crumbled gorgonzola (or bleu cheese)
  • 4 slices swiss cheese
  • 1 cup grated parmesan cheese
  • 1 carton eggs (you will use 3 eggs this week)
  • 1 stick butter

Freezer (or Refrigerated)

  • Ravioli (I bought two smaller packs, buy for however many people you are feeding)

Grocery Notes

I’ve talked before about the value of buying in bulk and I really mean it! I buy in bulk whenever possible. My local grocery store has so many items in bulk and they always come out cheaper than the pre-packaged items. For this week, you can buy your field greens in bulk (in my grocery store the bulk field greens and spinach are located by the packaged lettuces) for a good money saving option.

Pantry Items

As always, there are several pantry items that you will need (and are not on the grocery list). Be sure you have the following on hand: ¼ cup all-purpose flour, salt, pepper, olive oil, canola oil, non-stick cooking spray, basalmic vinegar, dried basil, dried parsley, dried oregano, and crushed red pepper flakes.

Jason makes an amazing rub that we like to use on pork. He doesn’t measure anything, and he makes big batches of it at a time and so I can’t give you an exact recipe here, but I can give you an idea of what ingredients go into it. We encourage you to play around with the measurements until you end up with something that you like! We like ours sweet and spicy. All the following ingredients are in the rub, in varying amounts:

Brown sugar

Paprika

Cayenne pepper

Salt

Black pepper

Garlic powder

Cumin

Etc.
