Menu Notes

This week is filled with tasty, fresh dishes. If you’ve been cooking along with Blackboard Kitchen, then you will start to feel really confident with your breading and stovetop chicken cooking skills this week, as the strategies that I use stay consistent. We really enjoyed eating everything this week and I hope you enjoy making everything!

Thank you to those of you who commented on last week’s format. Starting this week, Blackboard Kitchen will be posting all recipes by Sunday night. The response was that people like to see what’s coming up and sometimes change the order of meals based on produce ripeness. You asked for it – you got it!  Thanks for the feedback, cooks!

Grocery List

Estimated Cost:  $70

 

Produce

  • 1 head lettuce
  • 1 package field greens
  • 2 lemons
  • 1 large bunch basil
  • 1 head garlic
  • 1 lb. tomatoes
  • 2 zucchini
  • 1 large eggplant
  • 1 bunch green onions
  • 4 ears corn
  • 1 yellow onion
  • 1 red pepper
  • ¾ lb. mushrooms

Meat

  • 2 lbs. boneless, skinless chicken breast

Pantry

  • Parmesan cheese
  • Walnuts
  • 2 lbs. penne pasta
  • 1 large can crushed tomatoes
  • 1 package small whole wheat tortillas
  • 1 small jar anchovies

Bakery

  • 1 large loaf French bread

Dairy

  • Eggs (you only need 1 for this week’s menu)
  • 1 container fresh mozzerella
  • Monterey jack cheese
  • Milk

Grocery Notes

I bet you’re wondering about the anchovies on this week’s grocery list….Yes, you really do need them! We are going to make our own Caesar dressing this week for a chicken Caesar salad and you must include them. I know you might think you don’t like anchovies, but me and the salty little fish from the sea beg you to give them a second chance! They are the classic ingredient in Caesar dressing and add such a unique, tasty flavor.

You’re going to use your loaf of French bread three times this week – for croutons for the salad, and breadcrumbs for the Chicken Milanese and Veggie Casserole. Make sure it stays fresh throughout the week (cut it into chunks and freeze, if you are concerned about it!).

Pantry Items

As always, there are several ingredients that you will need this week that are not on the grocery list.  Out of your pantry you will need:  olive oil, grapeseed oil, basalmic vinegar, basil, oregano, parsley, crushed red pepper flakes, salt (I use kosher salt), freshly ground black pepper, and cayenne pepper. Make sure you have all these items on hand!
